Service description
Determining the total fiber content in a sample is essential for assessing its nutritional and functional value. Dietary fiber plays a key role in digestive health, metabolic regulation, and disease prevention. Moreover, in the food industry, knowing the total fiber content allows for the development of products with improved properties, such as increased satiety and structural stability. Its analysis is also crucial for the valorization of agri-food byproducts, contributing to sustainability and the efficient use of resources.
The determination of fiber content in solid food samples is based on the enzymatic digestion of defatted samples using ¿-amylase, protease, and amyloglucosidase, followed by gravimetric determination of the resulting residue. The total fiber percentage is calculated using the following formula:
Fiber (%) }= (Residue (g) - Proteins (g) - Ash (g))x100/ Sample (g)
