H2O2 is a constituent of oxidative metabolism and is itself an ROS. It is a strong oxidant that initiates localized oxidative damage that leads to disruption of metabolic function and loss of cellular integrity at sites where it accumulates. Accumulation of H2O2 may aggravate oxidative damage. H2O2 signals oxidative stress in the compartments where it originates and leads to an appropriate response in the cellular defense systems. Therefore, quantification of H2O2 is an indicator of oxidative stress in fruit cells. Its quantification is carried out by means of a biochemical reaction whose product absorbs at a certain wavelength.
