Service description
The pilot plant has two types of cheesemaking facilities:
a) a laboratory cheesemaking facility consisting of two 10-liter vats. Ideal for initial fermentation characterization tests or coagulation tests.
b) a pilot cheesemaking facility consisting of two 250-liter vats. The plant also has a refrigerated milk storage tank, a curd distribution table, various types of cheesemaking molds, and horizontal and vertical pneumatic presses.
Two base service rates have been developed. These include the production of an acid and/or enzymatic coagulation cheese, including the steps of coagulation, curd cutting, whey removal, molding, salting, and pressing. The cost of raw materials is not included, although the necessary milk can be purchased from the center if necessary. Given the many differences and types of cheese ripening, this stage is not included in the base quote.

Additionally, the attached laboratory can perform tests such as pH monitoring or coagulation using Optigraph.
